The Relais de Poingam sits in the far north of New Caledonia, right on the tip of Grande Terre. A few rustic chalets and a campsite look out over the sea. The dinner bell sounds at 8 o'clock, and guests are invited to enjoy clam carpaccio, salt-baked fish, and grilled venison, lobster, or cassava. The chefs celebrate local produce, and local women provide top-quality service.
