In Swedish, they are called Köttbullar. When you think of meatballs, you often think of the ones your mother made.
But these are made with as much love and come in a multitude of varieties. They differ according to the seasons, but the menu always displays fourteen different recipes. You may try some with dill, while others are made of lamb with fennel seeds or pork with spices. You will also find salmon, trout, or herring meatballs, and, finally, for vegetarians, vegetable 'meatballs'. You finally choose the accompaniment, with or without cranberries, mustard sauce, potato pancake, or pickled cucumber. You can eat them on the spot or, like many Stockholmers, as a takeaway lunch.
Finally, do you know the secret of a good meatball filling? The crumbs, which are one of its basic ingredients, should always be soaked in milk.
