Minimalist design in three colours: white, grey, and black. The hotel, designed by architect Jean Nouvel, is surprising and seductive.

Located on the banks of the canal, this recently opened hotel is a daring glass tower inspired by St Stephen's cathedral. It therefore enjoys a superb view of the city centre. This is particularly true in the gourmet restaurant at the top of the building.

With delicious cuisine overseen by the three-star French chef Antoine Westermann, you may also admire the vibrantly colourful ceiling 10 metres above your table, painted by a Swiss artist. The contrast is striking with the minimalism of Jean Nouvel's architecture: 182 rooms including 26 suites are uniformly white, grey, or black from floor to ceiling, which is a surprising concept at first, but you get used to it very quickly.

For an exceptional outing, the concierge can arrange a carriage ride with Champagne and a picnic.
